2011 Reserve Syrah

Winemaker Eric's Notes:
Earthy aromas and dark fruit on the nose. Lush black cherry dominates with ripe berries that flow into a darker side showing spicy smoked meats finishing with ample chewy tannin. This fruit was harvested at 26.5 Brix, de-stemmed and fermented in small open top lots. The fermentation began with a cold soak with dry ice for 24 hours before inoculation with specialized vineyard isolate yeast. Dry ice helps to slow and protect the fermenting must allowing for a slow and cool fermentation. This method helps to promote a more floral fruit forward characteristic in the finished wine. After an extended maceration the wine is gently pressed to select French oak barrels to age for 22 months before bottle.
