2011 Reserve Merlot
2011 was, in general, a cooler year which lead to a longer growing season at Paso de Record Vineyard. The wine shows evidence of the below average temps with beautiful restrained fruit and well balanced acid. Flavors of bright raspberry and dark cherry are prevalent with a hint of cocoa to round out the elegant finish. The fruit comes from the Record Family Vineyard located in the rolling hills of Northern San Luis Obispo County. We harvested the fruit between 25-26 Brix, it was then de-stemmed and fermented in small open top lots. The fermentation began with a cold soak with dry ice for 24 hours before inoculation with specialized vineyard isolate yeast. Dry ice helps to slow and protect the fermenting must allowing for a slow and cool fermentation. This method helps to promote a more floral fruit forward characteristic in the finished wine. After an extended maceration the wine is gently pressed to select French oak barrels to age for 16 months before bottle.
